Grilled or Fried Skirt Steak
2 lbs beef skirt steak
2 Tablespoons lemon juice
1/3 cup spicy brown or Dijon mustard
Salt and Pepper to taste
1 Teaspoon horseradish (if desired)
In a small bowl, stir together the lemon juice and mustard. Rub steaks with the mustard marinade. Place in a sealable plastic bag and let it marinate for at least 4 hours or up to 24 hours. Grill or fry steaks about 3 minutes per side on medium- high, or until desired degree of doneness. Let meat rest 5- 10 minutes before carving.
