Roasted Tri- Tip
1 Tri- Tip Roast (approx. 2 lbs)
1 Teaspoon dried Rosemary, crushed
2 cloves of garlic, minced or pressed
2 Teaspoon kosher salt
1 Teaspoon ground black pepper
2 Tablespoons of olive oil
Combine rosemary, garlic, salt and pepper and olive oil to form paste. Spread the paste evenly over entire Tri- Tip. Place roast, fat side up, in an open roasting pan. Roast in pre heated 400 degree oven for 20- 25 minutes. Cooking times should be adjusted based on the size of your Tri- Tip. Allow roast to stand, tented with aluminum foil, for at least 10 minutes. Carve roast across the grain into thin slices.
